Yeah, you have a 320mm disc and a single-disc converted 640 would have a 300mm disc. Unfortunately you can't just change the intermediate bracket, different pin spacing on the caliper. However the dual disc bikes use a caliper with a 30mm and a 32mm piston, while your bike has two 28mms.
